This is the perfect Blueberry Muffin recipe – adding the creamy lime glaze takes it over the top!
How can it be Thursday already?! I have had these pictures ready to go since Monday and have been doing other fun stuff and haven’t gotten around to posting. In case you’re wondering what kind of fun stuff we’ve been up to…over the weekend it was a church picnic and pie contest and a trip to the pool. Monday we hit up our favorite BBQ joint and stopped at Krispy Kreme for dessert, it’s a special treat and something we do every few months or so. Tuesday turned out to be the perfect day for a boat ride on Lake Michigan, it was insanely hot and the water was p-e-r-f-e-c-t. Yesterday I tried to stay inside to keep cool and worked on the basement and other stuff for awhile and then I actually had to make supper (first time this week). Muffins…the well loved cake for breakfast. You guys, this is a recipe you have to try. Especially if you love those bakery style muffins, the seriously huge ones. I’ve made this recipe several times with chocolate chips and also with blueberries. They are impressive to say the least, you get 12 huge muffins from this recipe. I decided to tweak it with a lime twist after we picked blueberries last week and I was dreaming up reasons to make these Blueberry Lime Cupcakes with Lime Cream Cheese Frosting. So I settled things by adding lime to this already perfect muffin recipe and enjoyed these for breakfast.
Ingredients
- 3 cups FLOUR
- 4 teaspoons BAKING POWDER
- 1 teaspoon SALT
- 2 EGGS
- 1 cup SUGAR
- 1 cup MILK
- 1/2 cup OIL
- 1/2 teaspoon VANILLA EXTRACT
- Zest of 1 LIME
- 1 1/4 cup FRESH BLUEBERRIES (frozen should be fine too)
- 1 oz. CREAM CHEESE
- 1 1/2 Tablespoons FRESHLY SQUEEZED LIME JUICE
- 1/2 cup POWDERED SUGAR
Instructions
- Preheat the oven to 425 degrees. Prepare 12 cup muffin tin.
- In a large bowl, combine flour, baking powder and salt.
- In a separate bowl, combine eggs and sugar. Add in milk, oil, vanilla and lime zest and mix well. Add wet ingredients to the dry ingredients and stir together with a wooden spoon. Fold in blueberries.
- Fill muffin tins all the way to the top with batter. Bake in the 425 degree oven for 5 minutes, after 5 minutes turn temperature down to 375 degrees and bake for an additional 18 minutes.
- Remove from oven and let cool in pan for 10 minutes. Cool completely before glazing.
- Place cream cheese in a bowl and heat in microwave for 10 seconds. Stir until smooth and add powdered sugar and lime juice. Drizzle over tops of muffins before serving.

Oh my goodness, these look amazing! I was actually making lemon pancakes this morning and I thought about doing lime instead, but I chickened out because I didn’t know if lime glaze was even a thing. (I am clearly no chef). Thanks for sharing!
