Garlic Chicken with Orzo Pasta

This is a simple recipe that is so delicious.   I found this recipe before Jackson was born and it turned out to be so quick and tasty that we used it almost every week before our child birth class.  We needed a recipe that we could make quickly as our class started soon after we got off work.   We have made it several times since and Jack loves it now too.  The recipe serves about 4 people but you could easily double it.

Garlic Chicken with Orzo Pasta

1 cup uncooked orzo pasta
2 Tablespoons olive oil
2 cloves garlic, minced
1/4 teaspoon crushed red pepper
2 boneless, skinless chicken breast halves- cut into bit size pieces
salt to taste
1 Tablespoon fresh parsley
2 cups fresh spinach leaves
1/4 cup parmesan cheese plus extra to sprinkle on top

Bring large pot of lightly salted water to boil.  Add pasta, cook for 8 to 10 minutes, until al dente and drain.

Heat oil in skillet over medium heat and cook the garlic and red pepper for 1 minute until garlic is golden brown.  Stir in chicken, season with salt and cook 2 to 5 minutes, until lightly browned and juices run clear.

Reduce heat slightly and mix in the parsley and cooked pasta.  Place spinach in the skillet and continue cooking for 5 minutes, stirring occasionally until spinach is wilted.  Add parmesan cheese.

Serve with extra parmesan for topping!
