{Baked} Chicken Taquitos

I’m always looking for a dinner that’s easy and delicious.  My sister gave me the idea to try these taquitos and we loved them!  We ate them as our meal, but they would be great as an appetizer.  The leftovers were actually really good reheated in the oven the next day.


CHICKEN TAQUITOS

Ingredients:


1/3 Cup (3 oz) cream cheese, softened
1/4 Cup green salsa
1 Tablespoon fresh lime juice
1/2 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
3 Tablespoons chopped cilantro
2 Tablespoons sliced green onions
2 Cups shredded cooked chicken
1 Cup grated pepper jack cheese


small flour tortillas
kosher salt
cooking spray


Preheat oven to 425 degrees.  Cover baking sheet with foil and lightly coat with cooking spray.  Stir together softened cream cheese, green salsa, lime juice, cumin, chili powder, onion powder and garlic powder.  Then add cilantro and green onion.  Add chicken and cheese and combine well. 


(You can prepare up to this step ahead of time and leave in the fridge.)


Work with a few tortillas at a time and heat in the microwave until they are soft enough to roll without cracking. I did about 15 seconds. 

Place 2-3 T of chicken mixture on the lower third of a tortilla, keeping it about 1/2 inch from the edges.


Then roll them up tight and place them seam side down on your baking sheet.  Make sure they aren’t touching.  Spray the tops lightly with your cooking spray and sprinkle kosher salt on top.
Place in oven and bake for 8-10 minutes or until ends start to brown.  (The original recipe uses corn tortillas said 15-20 minutes, but mine were flour and were done at about 8 minutes.)  We served them with sour cream and guacamole.
