Mediterranean Orzo Pasta Salad

As our last few days of summer draw to a close, there seems to be an abundance of last minute get togethers.  I thought I would share one of my favorite pasta salad recipes.  This would be great to take to a picnic or even have some friends over for lunch.  We most recently used it as a side dish but you could definitely add shredded chicken to create an entree.
This is another recipe from my mother-in-law, Shari.  We have gotten a lot of great recipes from her over the years.  Where is your favorite place to get recipes?



Mediterranean Pasta Salad

1 cup Orzo pasta
1 can sliced black olives
1 cup diced red pepper
1 cup diced green pepper
1/4 cup crumbled feta cheese
Dressing:
1 package Hidden Valley Ranch dressing mix
3 Tablespoons olive oil
3 Tablespoons red wine vinegar
1 teaspoon sugar
1/2 teaspoon dried basil
Cook orzo pasta according to package instructions.  Drain, rinse with cold water.  Mix orzo, olives, peppers and feta cheese in a bowl.  Whisk together dressing ingredients.  Stir dressing into orzo mixture. Refrigerate 2 hours before serving.

    This is a great recipe – simple, but all the flavor! Orzo pasta is one of my favorites…and it pairs so well with veggies and cheese. My favorite recipes are from my mom. She very often gets them from the same places that I find recipes, but she has a great eye for a good dish. She also has a lot of recipes that she has made over the years which are my favorites, too.
