SRC: Cheesy Penne with Spinach and Artichokes

Today is a day that I look forward to all month long…Secret Recipe Club Reveal Day!  Want to learn more?  You can find all the info here.
This month I was assigned the blog Mostly Food and Crafts.  Danielle is a stay at home mom of 2 from Tennessee.  Her fabulous blog has a wide range of recipes and crafts.  She does a weekly ‘What I Bookmarked‘ post and she’s slightly addicted to Pinterest (I can relate to that one!).  I’d love to make her Banana Nutella Bread, Oatmeal Cookie Pancakes, Chicken with Lemon Artichoke Sauce or Bolognese Sauce.  My kids will love to make Snow Cream when there’s fresh snow around.

One of my all time favorite appetizers is Spinach Artichoke Dip, so I was quickly drawn to this recipe.  It was AMAZING!  The flavors of my favorite appetizer in something that is actually an easy main dish with only 6 ingredients?  I’ll take it!  I did up the parmesan cheese a little and add fresh garlic.  This would be a great weeknight meal.

8 oz. PENNE PASTA
1 (14 oz.) can ARTICHOKE HEARTS, rinsed and quartered
1 (9 oz.) box FROZEN CREAMED SPINACH, thawed
3 GARLIC CLOVES, finely minced or grated
1/2 cup PARMESAN CHEESE, grated
2 cups FRESHLY SHREDDED MOZZARELLA CHEESE
Cook pasta according to package directions.  Drain and return to pot.  Heat broiler.
Add artichokes, spinach, garlic, parmesan cheese and 1 cup of mozzarella.  Season with salt and pepper.  Toss to combine.
Place mixture in a 2 quart baking dish, top with remaining cheese.  Broil until cheese is melted and golden in spots (2-3 minutes).
