Pumpkin Cream Oreo Tart

It’s Improv Cooking Challenge time once again.  (Check out the Mini Caramel Apple Fruit Pizzas that Megan made last month!)  Kristen from Frugal Antics of a Harried Homemaker is the new hostess for this fabulous challenge.  This month’s ingredients were pumpkin and cream cheese.
It’s no secret that we love pumpkin here at C&C.  
So this was easy.  
And by easy, I mean SUPER EASY.
This incredible dessert is simple and impressive…make ahead and no bake…cream cheese, pumpkin and chocolate.  Do I have you convinced yet?  This is something you must make…and soon.

Crust:
16 Original Oreo Cookies (I used Trader Joe’s Joe-Joes)
4 Tablespoons BUTTER, melted

Filling:
8 oz. CREAM CHEESE, softened
3/4 cup PURE PUMPKIN PUREE
1/2 cup GRANULATED SUGAR
1/2 teaspoon VANILLA
1/4 teaspoon CINNAMON
1/8 teaspoons NUTMEG

Topping:
1/2 cup HEAVY CREAM
3 Tablespoons SUGAR
1/4 teaspoon VANILLA

Crushed Oreos, for garnish (optional)

In a food processor, grind cookies into fine crumbs.  Pour in melted butter and pulse to mix.  Spoon mixture into 9 inch springform pan (or a pie plate).  Press mixture down and up the sides of the pan (I used a spoon for this).  Place in refrigerator.

In a large bowl, whip cream cheese until smooth, scrape down the sides of the bowl and whip again.  Stir in pumpkin puree, sugar, vanilla and spices.  Whip 1 minute on high,  scrape down the sides and mix again another 15 seconds or so until smooth.  Pour into crust, smooth top with spatula and return to refrigerator.

Whip cream with sugar and vanilla until stiff peaks form.  Spread on top of filling layer.  Garnish with crushed cookies if desired, store in fridge until ready to serve.

    I’m stopping over from the Improv Challenge. This looks amazing! I love anything with pumpkin…and oreos…and whipped cream, so this is probably a perfect dessert for me! I think I’ll have to try it out for Thanksgiving.
