Sophisticated Mac & Cheese

If you have been reading this blog for any amount of time, you may have discovered that I LOVE MAC & CHEESE.  A few weekends ago, I went to Granite City for dinner and ordered the Adult Mac & Cheese.  It was FANTASTIC.  It is a combination of my favorite things… noodles, pepper jack cheese, bacon, alfredo and spiciness (it did come with chicken in it, but it wasn’t my favorite)!  I went home and immediately thought of how I could recreate it.  It came together quite nicely and we have already made it twice!  The first time it wasn’t as spicy as I would have liked, but that is one of the great things about it.  You can adjust the spicyness by adjusting the pepperjack cheese and the crushed red pepper flakes.

Sophisticated Mac & Cheese

Ingredients

  • 16 oz PASTA, we used Rigatoni
  • 4 slices BACON, cooked and chopped
  • 1 jar (15 oz) ALFREDO SAUCE
  • 1 1/2 cups PEPPER JACK CHEESE, shredded
  • 1 cup CHEDDAR CHEESE, shredded
  • 2 teaspoons CRUSHED RED PEPPER FLAKES
  • 1/3 cup BREAD CRUMBS

Instructions

  1. Cook pasta according to directions on package til al dente. In a large sauce pan, pour alfredo and heat over medium heat. When warm, add cheeses and stir until melted and smooth. Stir in crushed red pepper flakes and bacon. After draining noodles add them to the sauce, stir until noodles are covered. Transfer to a 1 1/2 quart baking dish and top with bread crumbs. Place under broiler til bread crumbs are toasted (this does not take long!!). ENJOY!

    That sounds fabulous! I’ve never really thought of kicking up the heat in mac n cheese, but as a spice lover, I know I would eat this up! (And fast!) I’m going to try this. Thanks!

    Any recommendations on alfredo sauce? I have a hard time finding jarred alfredo that tastes good – rarely do they taste like homemmade stuff.
