Parmesan Crusted Chicken

You have all probably seen the mayonnaise commercial where the woman doesn’t want a boring ole’ meal again, so she has this bright idea to spread mayonnaise on chicken and it comes out of the oven looking all delicious.  Well in a moment of needing to use what I already had on hand, I looked up the recipe and was not disappointed.  It was just as easy as it looks on TV and was a perfect weeknight meal.

Parmesan Crusted Chicken

Ingredients
  • 1/2 cup MAYONNAISE
  • 1/4 cup grated PARMESAN CHEESE
  • 4 boneless, skinless CHICKEN BREASTS, I cut mine into tenders because I think it makes for easier serving
  • 4 teaspoons ITALIAN SEASONED DRY BREAD CRUMBS**
Instructions
Preheat oven to 425 degrees. Combine mayonnaise with parmesan cheese in medium bowl. Arrange chicken on baking sheet. Evenly top with mayonnaise mixture, then sprinkle with bread crumbs. Bake 20 minutes or until chicken is thoroughly cooked.
** I didn’t have store bought bread crumbs on hand, so I made mine from a slice of wheat bread. They worked wonderfully, but I will say that if you go this route you will need about 1/3 cup and throw in some Italian seasoning, otherwise it will be too blah.

    I’ve tried this recipe once on tilapia & it is pretty good! I bet the chicken is too.

    Simple, quick and I usually have those things on hand. I usually make my own bread crumbs. This is great! thank you for sharing
