Homemade Funfetti Cake

There is something exciting about taking a bite of cake and finding a rainbow of sprinkles on the inside.  I have bought the Funfetti Cake Mix before to make cupcakes and even for these Funfetti Donuts.  But when I saw a few versions of a homemade funfetti cake on pinterest, I wondered why I waited so long to discover it.  In one 4 day span I made it twice!  I made them in cupcake form with rainbow sprinkles for Maddux’s 2nd birthday party.  Then I made it for a friend’s baby gender reveal party.  The great thing about it is you can use any or all colors of sprinkles to get any desired effect.  For the party, since the baby was a girl I used only pink sprinkles on the inside, along with a layer of pink frosting.  There are so many directions you could take with this and not only do you end up with a delicious cake but a cake that is a lot of fun for all ages!

Homemade Funfetti Cake

Ingredients

  • 2 1/2 cups FLOUR
  • 1 1/4 cups SUGAR
  • 1 teaspoon SALT
  • 1 Tablespoon BAKING POWDER
  • 1/3 cup SPRINKLES
  • 1/2 cup BUTTER, softened
  • 3 EGGS
  • 1 1/4 cups MILK
  • 2 teaspoons VANILLA

Instructions

  1. Preheat oven to 350 degrees. In a medium bowl whisk together flour, sugar, salt, baking powder, and sprinkles. Add butter, eggs, milk, and vanilla and beat until combined, about 3 minutes. Divide into 24 cupcakes, 2 -8inch. or 1 -9x13inch cake pan. Bake cupcakes for 15-20 minutes, 8inch pans for 20-25 minutes, or the 9x13inch pan for 35-40 minutes. Let cool and frost with your favorite frosting and top with additional sprinkles, if desired. ENJOY!

    Great looking Cake!
    I’ve been wanting to make funfetti cake for quite some time now.
    I have to ask you something – the sprinkles don’t melt in baking?

    This cake really look fabulous, and it’s an easy recipe!

      Winnie, yes they do melt in baking. You will not find a crunch from the sprinkle but instead you will just have the wonderful color of the sprinkle. Just like it would be in a store bought funfetti cake mix. I hope you enjoy it!

    I was wondering, if I make this in a cake pan how should I prepare the pan? I tried parchment on the bottom with spray oil with flour, but the middle stuck to the parchment a bit and the sides crumbled a little. It otherwise looks great; I plan to frost it tomorrow.
