SRC: Cinnamon Churro Chex Mix

The blog I was assigned this month was The Double Dipped Life.  Krista has an index full of delicious breakfasts, main dishes, desserts and more.  I contemplated long and hard…Lime Cilantro Chicken, Thai Banana Pudding, Turkey Dill Chowder…I ended up choosing Cinnamon Churro Chex Mix.  And what a fine decision that turned out to be.

It seems like this time of year especially, there is always a great reason for having a sweet little treat like this to snack on…having friends over, movie night, family game night.  This is ready to eat in about 15 minutes flat and it’s easy to have these ingredients on hand for a last minute snack attack.  This is one of those snacks that is incredibly addictive.  Consider yourself warned!

Cinnamon Churro Chex Mix

Ingredients

  • 9 cups RICE CHEX CEREAL
  • 1 cup CINNAMON CHIPS*
  • 1/4 cup BUTTER
  • 1/2 cup POWDERED SUGAR
  • 1/4 cup GRANULATED SUGAR
  • 1 1/2 teaspoons CINNAMON

Instructions

  1. Place cereal in a large bowl.
  2. In a small bowl, combine sugars and cinnamon.
  3. In another small bowl, microwave cinnamon chips and butter for a minute. Stir and heat 30 seconds more until smooth. Drizzle over cereal and stir well to coat evenly. Sprinkle cinnamon sugar mixture over coated cereal and stir again to evenly distribute cinnamon and sugar.
  4. Spread out to cool on waxed paper.

Notes

*Look for the cinnamon chips in your local grocery store near the chocolate chips. Sometimes these are only carried seasonally.

    I love this idea. I make snickerdoodle cookies with cinnamon chips so always have them on hand.
