Valentine’s Day is almost upon us and I’ve been inspired to make one more sweet for my sweeties.  I recently discovered that adding International Delight flavored creamer to baked goods injects a wonderful flavor.  So I decided that I wanted to make cheesecake.  Created with one of my favorite coffeehouse drinks in mind – a Caramel Macchiato.

Back in college there was a bookstore in our town and on Tuesdays you could get half price Caramel Macchiatos.  Let me tell you, we (my friend who worked next to me and myself) did not miss stopping at that bookstore very many Tuesdays.  We LOVED that drink – iced or hot, it did not matter – topped with whipped cream and a drizzle of caramel was a must.

These cute little cheesecake squares are perfect for sharing.  A thin chocolate cookie crust topped with creamy coffee and caramel flavored cheesecake.  For real, your sweetie will flip for this sweet treat!

Caramel Macchiato Cheesecake Squares

Ingredients

  • 10 OREO COOKIES
  • 4 Tablespoons SUGAR, divided
  • 3 Tablespoons BUTTER, melted
  • 12 oz. CREAM CHEESE, room temperature
  • 1/2 cup INTERNATIONALl DELIGHT CARAMEL MACCHIATO CREAMER
  • 1 teaspoon COFFEE EXTRACT
  • 2 EGGS
  • 2 Tablespoons FLOUR
  • WHIPPED CREAM, SPRINKLES and CARAMEL SAUCE for serving

Instructions

  1. Preheat oven to 350°. Line a 8x8 pan with foil.
  2. Crush cookies using a food processor or inside a plastic bag, stir in 2 Tablespoons of sugar and melted butter. Press into pan and bake for 5 minutes.
  3. Beat together cream cheese and creamer until smooth. Add in coffee extract, eggs, flour and remaining 2 Tablespoons of sugar. Mix well, pour on top of crust layer. Bake 22-25 minutes or until set.
  4. Cool completely and chill for 2 hours or overnight. Cut into squares, garnish with whipped cream, sprinkles and caramel sauce right before serving.
