As if mid-westerners need another Scotcheroo bar to love, these Triple Chocolate Scotcheroos are an incredible way to get your chocolate fix!

Being raised in the Midwest, I am no stranger to the classic scotcheroo bar.  In fact, they are one of my husband’s very favorite desserts.  I don’t make them very often and when I found the recipe for this version I was super excited to try it.  Well, this triple chocolate take is the fancier older sister of those classic bars.  That’s right, chocolate times 3.  The butterscotch flavor is still quite obvious despite all of the chocolate going on.  These bars right here have a new special place in my recipe repertoire.  This is true love in a 9×13 pan!

Triple Chocolate Scotcheroos

Ingredients

  • 1 cup SUGAR
  • 1 cup LIGHT CORN SYRUP
  • 1/2 cup PEANUT BUTTER
  • 1/2 cup NUTELLA
  • 3 cups COCOA KRISPIES
  • 3 cups RICE KRISPIES
  • 1 cup CHOCOLATE CHIPS
  • 1 cup BUTTERSCOTCH CHIPS

Instructions

  1. Line a 9x13 pan with foil and spray with cooking spray.
  2. Heat a large saucepan over medium heat and stir together sugar and corn syrup. Bring to a full boil and then remove from the heat. Stir in peanut butter and nutella. Add cereals and stir until well coated. Press into pan using the back of a spatula to flatten as even as possible.
  3. Melt chocolate and butterscotch chips together in the microwave, stirring until smooth. Pour over bars and spread evenly. Cool until set and cut into bars.

    I roll the mixture into walnut-sized balls and dip the tops in the melted chips. Easy to serve!
