Steak and Mushrooms with Blue Cheese Mashed Potatoes | Crumbs and Chaos

An easy, flavorful dinner can be on the table in minutes with the help of Imagine® Organic Culinary Simmer Sauces.  Steak and Mushrooms served on top of Blue Cheese Mashed Potatoes is what’s for dinner tonight!

Do you ever feel like you fall short a making dinner?  {Raises hand}  Even food bloggers feel that way more often than they’d like to admit.  I’m a firm believer in having a few tricks up your sleeve when making dinner.  Whether it’s having a favorite quick appetizer, simple dessert or an easy way to make a flavorful meal in no time at all, it’s possible for anyone to feel like a rock star in the kitchen.

With a little help from Imagine® Organic Culinary Simmer Sauces, that simple, tasty meal can be on your table in just minutes.  Their sauces come in a handy pouch, are organic, free from preservatives, artificial ingredients and MSG.  And there are four fabulous flavors to choose from: Portobello Red Wine, Thai Coconut Curry, Louisiana Creole and Latin Veracruz.  You choose and quickly sear your favorite protein, add in any extra veggies that you like, simmer in the Imagine® Sauce and serve with a side dish.  Seriously easy folks.

I used the Portobello Red Wine Sauce to make Steak and Mushrooms paired with Blue Cheese Mashed Potatoes. After thinly slicing about 1 lb. of NY Strip Steak, I quickly seared it in a bit of olive oil.  While the steak was cooking, I sauteed about 4 oz. of mini Bella mushrooms in a 1/2 Tablespoon of butter for about 4-5 minutes.  I added the Portobello Red Wine Imagine® Organic Culinary Simmer Sauce and the sauteed mushrooms to the pan with the steak and let it simmer for 5-10 minutes.  After a garnish of chopped fresh parsley, I served it over the blue cheese mashed potatoes.

Blue Cheese Mashed Potatoes

Ingredients
  • 2 lbs. YUKON GOLD POTATOES
  • 1 teaspoon KOSHER SALT
  • 2 Tablespoons BUTTER
  • 2 Tablespoons HALF & HALF or MILK
  • 2 oz. CRUMBLED BLUE CHEESE
  • SALT & PEPPER
Instructions
  1. Peel and dice potatoes. Put in a medium saucepan and cover with water. Add 1 teaspoon kosher salt and bring to a boil.
  2. Boil for 10-13 minutes or until potatoes are fork tender. Drain and return to the pan. Add butter and half & half. Mash with a potato masher until desired consistency is reached. Stir in blue cheese and season to taste with salt and pepper.
  3. Serve with steak and mushrooms cooked with Imagine® Organic Culinary Simmer Sauce.
