Thin Mint Popcorn

It’s Girl Scout Cookie time.  I know that all of those cookies are easily enjoyed on their own, but sometimes it’s fun to combine two of your favorite things to make the ultimate movie night snack.
Only 4 ingredients to this sweet treat, Thin Mint Popcorn is super yummy and a great snack for your next movie night!
Enter Thin Mint Popcorn…quick, easy, dangerously addictive and deliciously minty – it has all the qualities of a really great snack.  Do yourself a favor and make some soon!
This recipe makes a whole baking sheet full so you’ll have plenty to share with friends.  This is still delicious the next day, but the popcorn does soften up a little bit.  If you like your popcorn really crunchy, you may want to consider making this shortly before you plan on enjoying it.

Thin Mint Popcorn

Your fave Girl Scout Cookie + a classic movie snack = Thin Mint Popcorn

Ingredients

8 cups of lightly salted POPCORN (1/4 cup unpopped if you are popping your own)

8 oz. CANDIQUIK (or vanilla almond bark or other candy coating*)

1/4 teaspoon MINT EXTRACT

18 THIN MINT GIRL SCOUT COOKIES

Instructions

Line a baking sheet with waxed paper.
Place popcorn in a large bowl. Coarsely chop cookies, set aside.
In a microwavable bowl, melt candiquik for 45 seconds. Stir; heat for 15 more seconds. Stir again. Repeat until completely melted.
Stir in mint extract and pour over popcorn. Add in chopped cookies and gently stir together until everything is coated.
Spread on baking sheet to cool. Break into pieces.

Notes

*You can also use an equal amount of white baking chips.  Stir in 1-2 teaspoons of coconut oil or shortening after melting to thin a little bit.
