Pork Loin with Coca-Cola BBQ Sauce

Being born and raised in the Midwest, I was brought up by a Pepsi-lovin’ mother, so that’s what I was familiar with.  I went to college in the South, in Tennessee to be exact.  
I had to get used to questions like these: 
What would you like to drink?  I’ll have a Coke.  
What kind of Coke would you like?  Ummmm, what are my choices?  
At most restaurants, what I would call pop was referred to as a coke.  My friends and I found this humorous and got used the slang of the South and also grew to love Coke in our own Midwestern way.
This spring Coca-Cola wants you to spend more time gathering around the table with family and friends, really good food and, of course, a Coke or two.  Their new site, Coke with Meals, is full of delicious recipes and ideas to get your family around the dinner table.  You can save the recipes you like and also add other recipes you love to your very own cookbook that you can share with others.
I choose to try out a recipe by Chef G. Garvin – Pork Loin with Coca-Cola BBQ sauce.  The spices that you put on the pork loin alone are amazing and the BBQ sauce just takes it over the top.  This was tender and juicy, a total crowd pleaser at our house.  We enjoyed this with Smashed Sweet Potatoes, Baked Beans (which I added some of the BBQ sauce to) and Sweet Cornbread.  This is definitely a new family favorite!
Pork Loin with Coca-Cola BBQ Sauce

Ingredients

    PORK LOIN:

    • 2 (1 lb.) trimmed PORK LOIN
    • 1 Tablespoon GARLIC SALT
    • 1 pinch BLACK PEPPER
    • 1 Tablespoon CAJUN SPICE
    • OLIVE OIL
    • 1 Tablespoon BROWN SUGAR

    COCA-COLA BBQ SAUCE:

    • 2 Tablespoons CANOLA OIL
    • 3 Tablespoons DICED JALAPENO
    • 2 Tablespoons DICED GARLIC
    • 1 SHALLOT, finely diced
    • 3 cups KETCHUP
    • 1/4 cup CHICKEN STOCK
    • 1 cup ORANGE JUICE
    • 1/2 cup MOLASSES
    • 1/4 cup COCA-COLA
    • 1/2 cup BROWN SUGAR
    • 1 Tablespoon LIQUID SMOKE
    • 1 teaspoon GARLIC SALT
    Instructions

    PORK LOIN:

    Heat outdoor grill or grill pan to medium heat.
    Mix together garlic salt, black pepper, cajun spice and brown sugar. Rub each pork loin with seasoning mixture, drizzle oil over pork loins.
    Grill for 8-12 minutes, rotating every few minutes. Brush on bbq sauce in the last few minutes. (I found it took a bit longer than 12 minutes to cook through. Check with a meat thermometer.)
    Remove from grill and slice. Serve with sauce.

    COCA-COLA BBQ SAUCE:

    In a large sauce pan, add the oil, heat for a minute or two and add garlic, shallots and jalapeno. Saute for two minutes, then add remaining ingredients. Mix well and simmer on low until combined.

      Thanks for sharing this at Must Try Monday. My grandma uses Coke in her meats, too. Mainly with a cooked ham, but I bet it adds a great taste to pork, too.
