{Baked} Pumpkin Donuts with Maple Cinnamon Glaze

One thing I know for sure is that my son, Jonah, listens hears me when I talk.  I know that because I hear myself when he talks.  For instance, a few weeks ago, when his dad wasn’t really listening to him he said “I shouldn’t have to tell you 10 times!” or when he sees something he can’t believe and he says (just like I would) “Are you kidding me?”  But my most recent proof was on a weekly trip to Target.  We were browsing the dollar spot and it was full of fall/harvest stuff.  We saw some fall sprinkles in a 4-pack and the conversation went like this….

JONAH:  “Oh Mom, we should get those!”

ME: “No, we don’t need those.”

JONAH: “But they would be so perfect for donuts!”

Needless to say….. we bought the sprinkles and yes they really were perfect for donuts!  We made these pumpkin donuts with maple cinnamon glaze and they looked wonderful sprinkled with yellow, orange, green, and brown.  And of course they tasted wonderful as well.  I will be making these again and maybe even trying them with cream cheese frosting or a browned butter glaze.  YUM!

{Baked} Pumpkin Donuts with Maple Glaze

Ingredients

    For the donuts:
  • 2 cups FLOUR
  • 1 1/2 teaspoon BAKING POWDER
  • 1/2 teaspoon SALT
  • 1/4 teaspoonBAKING SODA
  • 2 teaspoons CINNAMON
  • 1/2 teaspoon NUTMEG
  • 1/4 teaspoon GINGER
  • 1/4 teaspoon CLOVES
  • 1/2 cup BROWN SUGAR
  • 1 cup PUMPKIN PUREE
  • 1/4 cup BUTTER, softened
  • 2 EGGS
  • 2 Tablespoon MILK
  • 1 1/2 teaspoons VANILLA
  • For the glaze:
  • 1 1/2 cups POWDERED SUGAR
  • 1/2 teaspoon MAPLE EXTRACT
  • 1 teaspoon CINNAMON
  • 2 Tablespoons MILK

Instructions

  1. Preheat the oven to 350 degrees. Coat donut pans with cooking spray.
  2. In a medium bowl, mix flour, baking powder, salt, baking soda, cinnamon, nutmeg, ginger, and cloves together until well combined.
  3. In a large bowl, cream together brown sugar, butter, and pumpkin. Add in the milk, eggs, and vanilla then mix well. Slowly stir in the dry ingredients until just combined.
  4. Place the mixture into a large zip lock bag. Cut off the corner and pipe evenly into the donut pans.
  5. Place into the oven and bake for 10-12 minutes or until donut springs back when lightly touched.
  6. Meanwhile combine powdered sugar, maple extract, cinnamon, and milk together until well combined.
  7. Place some wax paper under the wire rack. Dip the top of the donuts in the glaze then return to the wire rack to allow the glaze to set. Add sprinkles before set if desired (or if your 4 yr old talked you into them at the store!). ENJOY! Makes 12 donuts.

    What if I don’t have a donut pan?

      You could give this a try in a mini muffin pan, bake for about 10 minutes.

        could we use a donut maker if no donut pans?

          Yes, you could try it in a donut maker or even a mini muffin pan if you want. I’m not sure of the baking time for a donut maker.
