{Oreo Week} Chocolate Euphoria Cookie Bars

I had a bar very similar to this one at a church potluck a couple of months ago.  After my first taste, I went around from table to table to find out who made this fabulous bar because I needed the recipe…stat.

After I tracked down the lady who made them, she graciously shared the recipe with me.  I made it for a party soon after and it didn’t turn out quite like the first time that I had it.  I fooled around with the recipe a little bit and it came together even more beautifully.  It is chocolate lovers dream…and a fabulous conclusion to Oreo Week.

If your baking cabinet is anything like mine, you have odds and ends of bags of various chips that you can use in these bars.  Don’t have something that listed below?  I’m sure if what you have goes well with chocolate (or is chocolate) it will work just fine.  I found out that these work best when you make them ahead (YAY for make ahead desserts!) and give them at least overnight to set up.  I left them at room temperature all night, if you need to refrigerate them it’s probably best to cut them before you do that.  Another bonus – a little goes a long way, these are super rich and SO CHOCOLATE-Y!

Chocolate Euphoria Cookie Bars

Ingredients

  • 1/4 cup BUTTER, melted
  • 15 DOUBLE STUF OREOS*
  • 1/2 cup SEMI-SWEET CHOCOLATE CHIPS
  • 1/2 cup CARAMEL BITS
  • 1 cup MINI MARSHMALLOWS
  • 7 oz. SWEETENED CONDENSED MILK
  • 1 cup COCOA PUFFS CEREAL
  • 1/2 cup MILK CHOCOLATE CHIPS

Instructions

  1. Preheat oven to 350°. Line a 9 inch square pan with foil, spray lightly with non-stick cooking spray.
  2. In a food processor, pulse oreos to fine crumbs. Add melted butter, pulse a few more times to combine. Press evenly into the bottom of the pan.
  3. Layer semi-sweet chocolate chips and caramel bits on top of the crust and marshmallows on top of that. Pour sweetened condensed milk in a even layer over the marshmallows. Top with cereal and milk chocolate chips. Using the back of a metal spatula, press everything down gently.
  4. Bake for 15-20 minutes or until marshmallows are golden. Let cool to room temperature and give it at least overnight to set up completely before cutting into bars.

Notes

If you are using regular Oreos, you will need to use half of the package.

    Oh holy yum!!!! Those are the most incredible looking and sounding bar!!! So many good things going on in those…love the cereal on top too!!! I always have some sort of sugar cereal in our cupboards. Must start baking more with it:-) Your pics look super awesome too!!!
