Buffalo Chicken Meatballs

At our house, we love buffalo chicken flavors: buffalo chicken wings, pizza, dip, etc.  So when I came across the recipe I knew it would be great for our weekly football parties.  This is a great way to change up the traditional meatballs and received rave reviews by the crowd!  These would be fun for an upcoming holiday party or stock this recipe away for Superbowl weekend.

Buffalo Chicken Meatballs

Ingredients

  • For the Meatballs:
  • 1 lb. ground chicken or turkey
  • 2 oz. cream cheese, softened
  • 2 eggs
  • 2 Tablespoons chopped celery
  • 3 Tablespoons blue cheese
  • 1/2 teaspoon black pepper
  • For the Sauce:
  • 1/2 stick (4 oz) unsalted butter
  • 1/2 cup Frank's Red Hot Buffalo Sauce

Instructions

  1. Preheat oven to 350 degrees.
  2. Combine all meatball ingredients into a medium bowl.
  3. The mixture will be sticky. Form into 1-inch balls (bite size).
  4. Place them on a greased cookie sheet with sides and bake at 350 degrees for 10 minutes.
  5. Meanwhile, combine butter and sauce in microwave safe bowl for 2 minutes on high.
  6. After the meatballs have baked for 10 minutes remove from oven. Carefully dunk each meatball into the sauce and place back on the cookie sheet.
  7. Bake for another 12 minutes.
  8. Serve with celery.
