Two things I know for sure: I’m extra loving all things peppermint this season and this recipe for Chocolate Peppermint Bread has earned the love of my all of my children. I think quick breads are one of those things that most people enjoying making…they don’t take long to put together, they may only dirty one bowl and an hour later your house smells absolutely amazing.  The hardest part is waiting for it to cool enough to cut it.  No, scratch that, the hardest part is hoping they come out of the pan in one piece, especially if you’ve planned to taking that loaf of quick bread to share with someone else. Seriously, I want to know…how many times have you made something in a loaf pan and it hasn’t completely come out of the pan afterwards?  I know I can count at least 5 times this year (!), which is completely disappointing.  I mean what kind of food blogger shows up with a loaf of banana bread and there’s a huge chunk out of the bottom of it?  An embarrassed one, that’s for sure.

So when Pam Cooking Spray sent me products to try out, you better believe I put them to the quick bread test.  No one has time for quick bread that sticks to the pan, especially this time of year.  I particularly love their baking version, it has the non-stick spray plus flour for perfect results every time.  An added bonus is that Pam Cooking Spray now leaves 99% less residue on your baking pans and dishes than using margarine or bargain cooking sprays, so you’re not going to be standing at the sink scrubbing pans while the rest of your fam hangs out in the living room without you. I have a Smart-Tip to share regarding making quick breads in a loaf pan – when preparing the pan for baking using Pam Cooking Spray, spray only the bottom of the pan and 2 inches up the sides.  By not spraying the entire side of the pan, the bread has something to grasp onto and it gives the bread a nicer dome shape on the top.  It’s usually pretty easy to loosen the sides of the bread from the pan, so you just want to make sure you thoroughly spray the bottom of the pan. This recipe is a total peppermint chocolate explosion, I even added candy cane chocolate sandwich cookies to take the flavor even further but I’m sure that this bread would be fantastic without them.  Drizzling the top with melted peppermint crunch chips dresses things up a bit and makes it festive for the holidays.  Don’t even think about serving this without a cold glass of milk or a strong cup of coffee 😉

Chocolate Peppermint Bread

This easy recipe for Chocolate Peppermint Bread is bursting with chocolate and peppermint flavors and is perfect for the holiday season.
Ingredients
  • ½ cup BUTTER, room temperature
  • 1½ cups SUGAR
  • ¾ teaspoon SALT
  • 1 teaspoon VANILLA EXTRACT
  • 1 teaspoon PEPPERMINT EXTRACT
  • ½ teaspoon BAKING POWDER
  • ⅔ cup COCOA POWDER
  • 3 EGGS
  • 1¼ cup FLOUR
  • ¾ cup MILK
  • 10 CHOCOLATE SANDWICH COOKIES, such as OREO,regular or peppermint version, coarsely chopped (optional)
  • ⅓ cup ANDES PEPPERMINT CRUNCH CHIPS, plus more for garnish (optional)
Instructions
  1. Preheat oven to 350 degrees. Spray the bottom and 2 inches up the sides of a 9x5 inch loaf pan with Pam Cooking Spray for Baking.
  2. In a mixing bowl, combine butter, sugar, salt, extracts, baking powder and cocoa powder. Add the eggs one at a time and mix well. With the mixer on low, add half of the flour. Pour in the milk and then the remaining flour. Stop mixing when everything is just incorporated. Fold in the chocolate sandwich cookies if using.
  3. Pour into pan and bake for 60-75 minutes, or until a toothpick tests clean. Cool in the pan for 10 minutes. If needed use a plastic or rubber utensil to loosen the bread from the edge of the pan (I didn't have to do this when I made this bread, but you might depending on your pan) Remove from pan and allow to cool completely on a wire rack before cutting.
  4. If desired, melt peppermint crunch chips for about 30 seconds in the microwave, stir and heat about 20 seconds more. Stir until smooth and drizzle over cooled bread. Sprinkle with additional peppermint crunch chips. Allow the drizzle to harden slightly before slicing bread.

    This looks amazing! I love all things chocolate and peppermint. I will use Pam when I make this tomorrow. I use Pam daily – not just during holidays. I use Pam Olive Oil spray when cooking meats and veggies and Pam Butter spray for baking.

    I will be using Pam to make sure that all of my holiday treats don’t stick to the pan AND I spray it on my utensils to make sure that some of the stickier batters don’t stick to my utensils.     That sounds great, Pam w/flour. I have to get some. My last pumpkin bread fought me about coming out of the non-stick, sprayed pan. I got chunks out! grrrr
