There’s a little holiday coming up called Father’s Day.  I know for a fact the dads in my life enjoy a hearty stick-to-your-ribs kind of breakfast, so what better way to celebrate than a ‘BRATfast in bed?  {Note: also delicious enjoyed outside on the deck 😉 }

Brat breakfast hash, or ‘Brash’ as my husband referred to it, is a man size meal that starts with one of your favorite grilling meats – Johnsonville® Original Brats.  You can cook the brats however you prefer, on the grill or stove top.  While they’re cooking, you’ll make a simple potato and veggie hash.  The veggies get golden and sweetly caramelized, slice and add the brats once they’re cooked to perfection, top with a fried egg and serve immediately.  Dad’s day was just made.

I love the idea of using Johnsonville® Brats for breakfast because anything that I can have on hand in the freezer that would work for breakfast, lunch or dinner is a winner in my book.  They’re great grilled or browned in a pan on the stove top for any meal.  If they’re frozen, just thaw overnight in the fridge and you’ll be ready to make breakfast for dad.  Paired with a few simple ingredients that even the older kids could help chop, breakfast will be on the table in no time at all.  Best served with a side of fresh fruit and hot coffee 😉

Brat Breakfast Hash

Serves: 5
Ingredients
  • 1 pkg. JOHNSONVILLE® BRATS
  • 2 Tablespoons VEGETABLE or CANOLA OIL
  • 4 medium POTATOES, diced
  • 1 RED PEPPER, diced
  • ½ cup SWEET ONION, diced
  • 1 teaspoon MINCED GARLIC
  • 5 EGGS
  • SALT & PEPPER
  • FRESH BASIL, thinly cut (optional)
Instructions
  1. Cook brats on the grill or stove top.
  2. Heat oil in a large skillet, add potatoes. Stir occasionally until they begin to brown.
  3. Add red pepper and onion. Season with salt and pepper. Cook about 3 minutes. Add minced garlic, cook 1 minute more.
  4. Slice cooked brats and add to pan.
  5. In a separate pan, fry eggs to your liking.
  6. Divide hash among 5 plates. Top each with one egg and basil, if desired. Serve immediately.

    We absolutely love bratwurst here, but haven’t tried it in a hash for breakfast, this looks so good, especially with the egg on top!
