You guys, fall is in full swing.  Sweaters, boots, all things pumpkin, hot apple cider and S-O-U-P!  Does anyone else get excited about having a giant bowl of hot, nourishing soup for dinner?  In the fall and winter months, I make a big pot of soup at least once a week for dinner and enjoy the leftovers for lunch throughout the week too.  This soup is perfect for a busy weeknight, but it would also be a delicious addition to your game day spread.  We enjoyed it with cheese quesadillas…because soup’s always more fun with something to dip in it 😉

Smithfield Marinated Fresh Pork is a real flavor, real fast protein option for dinner any night of the week.  Available at your local Kroger store, Smithfield Marinated Fresh Pork comes in a variety of flavors in Tenderloin, Loin Filets and Sirloin cuts.  I loved using it to make this soup because the pork comes packaged with the flavorful marinade all ready to cook.  Yay for one less thing to do when you only have a few minutes to get dinner ready.  Stop over to check out even more recipes using Smithfield Marinated Fresh Pork.

To Make Slow Cooker Spicy Pork Soup:

Cut a 2 lb. Smithfield Marinated Roasted Garlic & Herb Pork Loin Filet into bite size pieces.  Put the pork in a 5-6 quart slow cooker.  Add diced tomatoes & green chilies, Great Northern beans, chicken broth, tomato sauce, tomato paste, ground cumin, salt and pepper.  Stir well and cook on low for about 6 hours.  So simple and so flavorful!

Slow Cooker Spicy Pork Soup
Ingredients
  • 1.5-2 lb. SMITHFIELD MARINATED ROASTED GARLIC & HERB PORK LOIN FILET
  • 2 10 oz. cans DICED TOMATOES & GREEN CHILIES*
  • 2 15 oz. cans GREAT NORTHERN BEANS, drained
  • 6 cups CHICKEN BROTH
  • 8 oz. can TOMATO SAUCE
  • 6 oz. can TOMATO PASTE
  • 1 teaspoon GROUND CUMIN
  • 1 teaspoon SALT
  • ½ teaspoon GROUND BLACK PEPPER
Instructions
  1. Cut pork loin into bite sized pieces. Place in 5-6 quart slow cooker.
  2. Add remaining ingredients, stir well.
  3. Cook on low for 6 hours.
  4. Serve with topped with shredded cheese and cheese quesadillas on the side.
Notes
*If you're not a fan of spicy, you could use regular petite diced tomatoes instead of diced tomatoes & green chilies.
