Chocolate Mayonnaise Cake

It’s hard to imagine that there would be two posts about cake in one week but hey we have a lot of family birthdays in the month of August. My husband Jason, turned the big 3-0!!!! today and we celebrated this past weekend with his favorite cake. While the name of the cake sounds quite interesting, the mayonnaise takes the regular chocolate cake and turns it into moist, rich, chocolate goodness. And the frosting…where do I begin?!?! It melts in your mouth.

This was Jason’s favorite cake recipe of his mom’s growing up and he still requests it for each birthday. Pair it with vanilla ice cream and you have the perfect way to celebrate your special day. And for Jason’s favorite way to eat his chocolate mayonnaise cake…he likes to put a piece in a bowl and pour milk over it! This is also the way our dad used to eat some of his favorite desserts, not for everyone but definitely worth the try!

Cake:
1 1/4 c. sugar
2 tsp. baking soda
2 c. flour
4 T. cocoa
1 c. warm water
1 c. Miracle Whip
pinch of salt

Frosting:
1 1/2 c. sugar
6 T. butter
6 T. milk
3/4 c. chocolate chips

Mix cake ingredients well. Pour into greased 9 x 13 pan. Bake at 350 degrees for 45-60 minutes. Cool.

Place frosting ingredients in a sauce pan. Bring to a rolling boil for 1 minute. Cool for 1 minute. Add chocolate chips. Stir until melted and pour over cake.
