I love when I am searching through my recipes for something to make for dinner for the week and I come across a recipe that I haven’t made in awhile but that I love! That is what happened with the salmon recipe. We have made this several times before but probably not for at least a year so it was definitely time to pull it out of the recipe book for the week. This recipe is healthy, very easy and sure to please the crowd. The Cajun seasoning has a little bit of a bite to it, so you may want to substitute or use less for that one if your family isn’t into spicy. Jack loved it, but he has always favored the strong flavors. We served it with brown rice and green beans.
Cajun Salmon

1 garlic clove, minced
1 Tablespoon olive oil
1 large onion, chopped
1 large bell pepper, chopped
1 8oz. can tomato sauce
2-3 Tablespoons Cajun or creole seasoning
16- 20 oz. of salmon fillets, cut into individual portions (4-5 pieces)
Preheat oven to 350 degrees.
Saute garlic, onion, and bell pepper in olive oil until tender.
Add tomato sauce, Cajun seasoning, and garlic.
Simmer uncovered for 20 minutes.
Spray pan with cooking spray. Bake salmon in pan at 350 degrees until half done, about 10 minutes.
Pour sauce over fillets and bake for 10 more minutes or until done.
