If I could describe this dish, I would say…easy, only 5 ingredients, quick, creamy, simple…are you seeing the pattern here? I mean it when I say easy, quick, simple and using only 5 ingredients you can make a delicious, creamy lemon linguine. I am a pasta lover, so I am always looking for fresh, new ways to enjoy it and we really liked the flavors in this dish.
It is great as a side dish, standing beside some awesome garlic bread sticks or spruced up with chicken, mushrooms or anything else you can think of! Linguine is the perfect pasta shape (nice and flat) for this sauce.
CREAMY LEMON LINGUINE
8 oz. Dry LINGUINE NOODLES
4 oz. CREAM CHEESE (light is ok)
2 Tablespoons OLIVE OIL
Juice and Zest of one LEMON
PARSLEY, 1 Tablespoon Fresh Chopped or 1 teaspoon dried
Cook linguine according to package directions in pot of boiling, salted water.
Warm cream cheese, olive oil and lemon juice in saucepan over low heat.
Just before pasta is done, ladle 1/4 – 1/2 cup* of cooking water from the pasta pot and add it to the saucepan of cream cheese mixture, stir. Drain pasta. Add it to the cream cheese mixture along with lemon zest and parsley; toss to coat.
Season with salt and pepper, serve with freshly grated parmesan cheese and additional parsley, if desired.
*If you are adding any additional items, definitely use 1/2 cup of cooking water. If not, you made not need all of the 1/2 cup of water to reach the consistency you like.
Additional items you could add:
Chicken, cooked and cubed
Shrimp, cooked
Sauteed Mushrooms
Finely Chopped Garlic Cloves
