5 Ingredient Challenge Week 4 Results

Today’s STEP: Under the Beds – Remove everything out from underneath the bed.  Vacuum well using the vacuum cleaner attachments to reach every area.




Week 4 Challenge- I only had three ingredients for my Challenge this week and they were:
Swiss Miss Hot Cocoa Mix Milk Chocolate 60 Envelopes [Misc.]
HOT CHOCOLATE PACKETS


CREAM CHEESE

Omaha Steaks 100 Precooked Bacon Slices
BACON


I knew my mom had a great recipe with Chicken, Bacon and Cream Cheese and I added Hot Chocolate packets to an ordinary chocolate chip cookie recipe.

So, I decided to make Bacon Wrapped Chicken with Muffin Tin Potatoes and Hot Chocolate Chip Cookies for dessert.

I had my parents over for dinner earlier in the week and I made this meal for them.  We all LOVED it!


Bacon Wrapped Chicken w/Cream Cheese & Chives

4 Boneless Skinless Chicken Breast
1- 8 ounce whipped chive and onion cream cheese
8 slices of bacon




Preheat oven to 400 degrees.  Between two sheet of wax paper, with a mallet, flatten chicken to about 1/2 an inch thick.  Spread about 3 tablespoons of cream cheese on top of chicken.  Roll and wrap with bacon and keep in place with a toothpick.  


Bake uncovered for 30-40 minutes (or until juices run clear.)  Then turn on the broiler and broil about six inches from the heat for about 5 minutes or until bacon is crispy.

Muffin Tin Potatoes

2 large russet potatoes, peeled and thinly sliced
1/2 cup of shredded cheese
1 shallot, finely chopped
salt
3/4 cup of heavy cream

Spray your muffin tin with cooking spray.  Layer potatoes, cheese, salt and shallots in each muffin cup.  Top each with 1-2 tablespoons of heavy cream.  Cover with foil and bake 30 minutes removing foil half way thru.  I baked these at the same time as the chicken I just made sure they were out before I turned on the broiler.  Scoop onto plate and enjoy with your Bacon Wrapped Chicken! (I loved how the sides of the potatoes got a little crispy!  Delicious!)



Now for dessert…
Hot Chocolate Chip Cookies

2 sticks of butter, softened
3/4 cup sugar
3/4 cup packed light brown sugar
1 teaspoon vanilla extract
2 eggs
2 3/4 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups milk chocolate chips
3 hot chocolate mix packets (regular not sugar free)

Preheat oven to 375 degrees.  Beat butter, sugar, brown sugar and vanilla in a large bowl until creamy. Add eggs, beat well.  In a separate bowl, stir together flour, baking soda, salt and hot chocolate packets and gradually add to butter mixture.  Beat all well until blended.  Stir in chocolate chips.  

Using a spoon or ice cream scoop place onto ungreased cookie sheet.  Bake 8-10 minutes or until slightly browned.  Cool for a short time and move to cooling rack.  These were wonderful!
