{Kid Friendly} Taco Pockets

April 4, 2011 By Crumbs and Chaos

Spread the love

One of the challenges of parenting is FEEDING TIME.

It happens every day – 3 meals, 1 or 2 snacks.

Children require nourishment to grow and function, laugh and play, shriek and run.  They need REAL food!

I love crowd-pleasing food and these were a hit around my dining room table!  These pockets are something that you can make ahead of time and reheat when you need them.  They make a great handheld main dish or a snack and you could really fill these with whatever you like. Much like the kind you find in the freezer section ______(rhymes with Tot) Pockets, only healthier because you know exactly what they’re made of.  Big smiles all around!

TACO POCKETS

1 recipe CALZONE DOUGH
1 lb. GROUND BEEF
1 packet TACO SEASONING*
2 cups SHREDDED CHEDDAR CHEESE
1 EGG, beaten
1 Tablespoon WATER

Make the calzone dough according to the directions, let it rest for 30 minutes.

Meanwhile, brown the ground beef in a large skillet.  Drain fat.  Season with taco seasoning*.

Preheat oven to 375°.

Take the dough and divide it into 16 equal pieces.  Roll each piece into a 5 inch circle.

Put 2 Tablespoons of taco meat on the dough circle.  Top with shredded cheese.  Fold in half and seal edges tightly (like a calzone, only mini).  Place on a parchment paper lined baking sheet.

Combine beaten egg and water in a small bowl, brush on top of pockets.

Bake for about 12-15 minutes or until golden brown.

Serve with salsa and sour cream for dipping.

These can be refrigerated or frozen and reheated in the oven for a quick meal or snack.

*Instead of using a packet of taco seasoning, I usually just add the following spices to the ground beef:

1/2 teaspoon GARLIC POWDER
1/2 heaping teaspoon CHILI POWDER
1    teaspoon CUMIN
1/2 teaspoon ONION POWDER
1/2 teaspoon SEASONED SALT
1/4 teaspoon BLACK PEPPER
1-2 Tablespoons WATER

Peanut Butter! On anything and everything! He also really likes fruit of any kind! But I think these would definitely work for my whole family!

I can’t wait to try these! I’m adding it to next week’s “Family Night” which includes dinner then a movie & popcorn (sometimes malts too) My son is on a popcorn kick and luckily he doesn’t realize how much better it tastes with butter so we air pop it (sprinkle kernels in the bottom of a brown paper bag-fold the top down and microwave) then he eats it plain! He also loves edamame.
