Last month during the 5 Ingredient Challenge, we saw how much you guys would like a little side dish inspiration. So this month’s Wednesday series is dedicated to just that – what to put beside your main dish meal. A new recipe and great suggestions that will help you in your weekly meal planning. You are creating a meal plan each week, right?
This week’s suggestions:
Turkey Burgers with a side of Potato Salad
Zesty Stuffed Peppers with a side of Fresh Green Beans
My usual criteria for determining if a side dish is worthy of gracing my dinner table…it has to be EASY, TASTY and RELATIVELY HEALTHY! Simplicity is key because I’m probably already devoting enough time to the main dish and I don’t want to be in the kitchen all night.
Vegetables take on a whole ‘nother flavor when roasted. Super delicious! We enjoyed this oven roasted broccoli with burgers and baked beans. It would also be great with Everyday Company Beef {a crockpot main dish} or Bacon Wrapped Chicken Tenders.
2 regular size heads of BROCCOLI, cleaned and stems trimmed
3 Tablespoons OLIVE OIL
1/8 teaspoon freshly ground BLACK PEPPER
1/2 teaspoon KOSHER SALT
1-2 Tablespoons freshly grated PARMESAN CHEESE
Preheat oven to 425°. Line baking sheet with foil.
Place broccoli on baking sheet. Drizzle with olive oil, toss to coat each piece well. Sprinkle with salt and pepper.
Bake for 15-20 minutes or until stems are golden brown and slightly crisp looking. Remove from oven and sprinkle with Parmesan cheese before serving.
