What did you do this weekend?
We, here at Crumbs and Chaos, spent a little quality time together as you can see in the picture above. Our little crowd sitting so still on the couch for 5 seconds minutes all for the promise of an Easter egg hunt. Yes, it was a little crazy, but everyone got away without injury.
After the hunt, they enjoyed these fabulous sugar cookie bars. That’s right – the sweet softness of a sugar cookie in bar form…the dream of a busy mother. You don’t need cookie cutters for this one, just press into the pan and bake. Frost with a beautiful, buttery frosting and you’ll have a happy crowd.
SUGAR COOKIE BARS
1 cup BUTTER, softened
2 cups SUGAR
4 EGGS
2 teaspoon VANILLA
5 cups FLOUR
1 teaspoon SALT
1/2 teaspoon BAKING SODA
2 cups SUGAR
4 EGGS
2 teaspoon VANILLA
5 cups FLOUR

1/2 teaspoon BAKING SODA
Cream butter and sugar until fluffy. Add eggs, one at a time, mixing after each egg. Add vanilla & mix well.
In a separate bowl, combine flour, salt and baking soda. Whisk to combine.
Add to wet mixture and mix just until combined. Spread on a greased baking sheet (use a 13 x 18 pan).
Bake at 375° for 10-15 min, until light golden brown or until a toothpick comes out clean.
Cool completely and frost.
Frosting:
1/2 cup BUTTER, softened
1/2 teaspoon VANILLA
Pinch of SALT
2 cups POWDERED SUGAR
2-3 Tablespoons MILK
FOOD COLORING and SPRINKLES
Beat butter, vanilla and salt until creamy. Add in powdered sugar and milk. Beat to desired consistency and add food coloring. Spread on cooled cookie, top with sprinkles if desired.
