Can you say delish??? I was looking for something new to do with sweet potatoes and I came across this recipe. It was easy (which you know I love) and it was the perfect balance of sweet and spicy. It was a little too spicy for Jack (my two-year-old) who usually likes spicy things but I used hot chili powder instead of regular so next time I will switch to regular chili powder or hold a few out in a separate dish for him.
Do you prefer white potatoes or sweet potatoes?
I like both but I really love a baked sweet potato with just butter and cinnamon.
Spicy Sweet Potatoes
3 large sweet potatoes, peeled and cubed
2 Tablespoons olive oil
2 Tablespoons brown sugar
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
Toss sweet potatoes in olive oil and add other ingredients. Toss to coat. Transfer to baking dish. Bake uncovered at 400 degrees for about 30 minutes. Stir every 15 minutes. Turn broiler on the last 3-5 minutes for a crisp potato.
