A couple of months ago, my mom and sister came to visit. It was evening when they got here and they hadn’t eaten much for dinner. I offered to make them something light. This is what I made them. They declared it delicious and have asked ever since when I was going to post it here on C&C.
Well, today’s the day. This is a simple sandwich-type meal that can be thrown together for lunch or a quick dinner. I really enjoy all of these flavors and I love that stuffing them in a pita is a different take on a classic combination.
BACON, cooked and chopped
GRAPE TOMATOES, halved or quartered
GREEN LEAF LETTUCE, chopped into bite size pieces
BLUE CHEESE DRESSING, store bought or make your own*
FRESHLY GROUND BLACK PEPPER
PITAS
Place bacon, tomatoes, and lettuce in a medium bowl. Add a small amount of dressing. Using tongs, toss everything together. Add more dressing if desired. Add in pepper, toss again to combine. Warm pitas slightly in microwave and cut in half. Carefully open and stuff with lettuce mixture.
Not a fan of blue cheese dressing? This is also great with ranch!
