(Game Day) Crockpot Reuben Dip

If you love reuben sandwiches, you will love this dip.  It is a perfect addition to any tailgate party.  My husband tried this dip at work recently and it was hit so we shared it with a few friends the following weekend for game day.  We often have people over to watch our favorite college team and we have found over the years that we want great food but not a lot of work.  Who wants to be busy in the kitchen while everyone else is watching the game?  So this one really hit the spot.  You can prepare before everyone arrives.

Crockpot Reuben Dip
Printable Recipe Here
1 cup Sauerkraut, drained
1 (8 oz.) package cream cheese
1 (8oz.) package Swiss cheese, shredded
6 oz. corned beef, diced
2 Tablespoons Thousand Island dressing (use more if you like more of that flavor)
Drain and rinse sauerkraut, mix with cream cheese and Swiss cheese.  Add diced corned beef and dressing.  Heat on low until cheeses are melted, stirring occasionally to blend all the ingredients.  Serve warm with crackers or cocktail rye bread.

    my mom has made something like this before but I do not think it was in the crockpot yummy

    I do one really similar to this, only I throw it in the oven for 20-30 minutes at 400. Clearly I don’t have the foresight for a crockpot. But I will next time because how great is it to not have to be rushed right before dinner.

    I love reubens and this sounds like a great dip recipe but it didn’t say what to put the crockpot on or how long to cook it. I am just a novice in the kitchen so I wasn’t sure exactly way to use the crockpot!!!!!!

      Set it on low and check it after an hour or so. You just want the cheeses to be melted. It may need more time than that, so just keep an eye on it.
