Buffalo Chicken Stuffed Pitas
To be completely honest, I am not a fan of eating meat off of the bone. I like the flavors but there is just something about the mess and the bone that just gets me. And because of that, chicken wings aren’t something that I usually make or order. Lately however, I’ve had buffalo chicken on the brain. I have really been craving it! I pulled this recipe off of the back of a Sensible Portions Pita Crackers box. I adapted it to be a meal instead of an appetizer and it worked out wonderfully. The flavor of buffalo chicken without the mess or the bones… perfection!
BUFFALO CHICKEN STUFFED PITAS
Ingredients
1 lb GROUND CHICKEN
1/4 cup CELERY, diced
1/4 cup CARROTS, diced
1 tsp DRIED PARSLEY
1/8 cup BUFFALO SAUCE
BLUE CHEESE CRUMBLES
6 PITA POCKETS
Directions
Put a little olive oil in a pan and cook celery and carrots. Add chicken and parsley and cook until chicken is cooked through. Add buffalo sauce and continue cooking until sauce has evaporated. Scoop chicken mixture into pita pockets. Top with blue cheese crumbles and more sauce if desired. ENJOY!
