Cheesy Vegetable Chowder

Winter has finally arrived in Iowa just in time for our soup week.   Nothing is better than having a better a steamy bowl of soup waiting for you at the end of a busy day.  Plus, I love that soup is so easy to warm up and eat the leftovers later in the week.  At my house we have a habit of making a soup at the beginning of the week and then eating it for lunches or freezing the leftovers for another day.  I haven’t tried freezing this soup but I might the next time if it doesn’t get eaten right away.

Cheesy Vegetable Chowder

Ingredients
  • 2 Tablespoons butter
  • 1/2 cup chopped onion
  • 1 cup finely chopped carrots
  • 1 stalk celery, finely chopped
  • 1 tablespoon minced garlic
  • 4 cups chicken broth
  • 2 large baking potatoes, peeled and chopped
  • 1 Tablespoon flour
  • 1/2 cup water
  • 2/3 cup milk
  • 2 cups broccoli, chopped
  • 2 heaping cups shredded cheddar cheese
Instructions
Melt the butter in a large soup pot. Add onions, carrots, and celery and saute until tender.
Add garlic and cook 1-2 more minutes.
Add chicken broth and potatoes. Bring to a boil and cook until potatoes are tender.
Mix flour with water in small bowl. Add to soup and simmer until slightly thickened.
Add milk and broccoli and cook until broccoli is tender and soup is heated through.
Stir in cheese, allow to melt and serve.
