Tomato Basil Soup

All this week, we’re serving up SOUP here at C&C.
I love soup.  In fact, I have a Pinterest board dedicated entirely to soup (I’ll take all the ideas I can get!).
Tomato soup is one of my favorites and I have been on a quest now for a couple of years to find an easy way to make it.  Well, my friends, I finally have. This version is warm, comforting and packed full of flavor.
It is also super easy to make and takes no time at all.  I did puree the soup, but that is an optional step.  I hear less complaining from my little taste testers if there aren’t very many chunks of veggies involved.  Add a salad and some crusty bread and you have an absolutely perfect dinner for a busy, cold winter’s night.

Tomato Basil Soup

Ingredients

  • 3 cloves of GARLIC, minced
  • 2 Tablespoons OLIVE OIL
  • 1 (28 oz.) can CRUSHED TOMATOES
  • 1 (14 oz.) can WHOLE TOMATOES
  • 2 cups CHICKEN STOCK/BROTH
  • 1 teaspoon SALT
  • 1 teaspoon SUGAR
  • 1/2 teaspoon BLACK PEPPER
  • 1/4 cup HEAVY CREAM
  • 3 Tablespoons FRESH or FREEZE DRIED BASIL
  • PARMESAN CHEESE

Instructions

  1. In a saucepan, heat olive oil on medium heat. Saute garlic for about a minute - be careful not to burn it.
  2. Add the crushed tomatoes to the pan and then the whole tomatoes (and juice) squeezing them as you put them in the pan to break them up.
  3. Pour in the chicken stock and add salt, pepper and sugar. Cook on medium heat at a low simmer for 10 minutes.
  4. At this point, if you would like to, you can use an immersion blender to puree the soup.
  5. Reduce heat to low, stir in the cream and basil.
  6. Serve topped with grated parmesan cheese.
