Ingredients
- 3 cloves of GARLIC, minced
- 2 Tablespoons OLIVE OIL
- 1 (28 oz.) can CRUSHED TOMATOES
- 1 (14 oz.) can WHOLE TOMATOES
- 2 cups CHICKEN STOCK/BROTH
- 1 teaspoon SALT
- 1 teaspoon SUGAR
- 1/2 teaspoon BLACK PEPPER
- 1/4 cup HEAVY CREAM
- 3 Tablespoons FRESH or FREEZE DRIED BASIL
- PARMESAN CHEESE
Instructions
- In a saucepan, heat olive oil on medium heat. Saute garlic for about a minute - be careful not to burn it.
- Add the crushed tomatoes to the pan and then the whole tomatoes (and juice) squeezing them as you put them in the pan to break them up.
- Pour in the chicken stock and add salt, pepper and sugar. Cook on medium heat at a low simmer for 10 minutes.
- At this point, if you would like to, you can use an immersion blender to puree the soup.
- Reduce heat to low, stir in the cream and basil.
- Serve topped with grated parmesan cheese.
