Chewy M&M Cookies

The spring time M&Ms have arrived and Jackson thought we really needed to get some at the store and I recently came across this recipe on Pinterest.  I love to buy M&M cookies at the store because they always seem to be just the right texture.  These turned out to be just as good.  I ran into a slight problem when I realized we were out of eggs.  So I went to the Internet to see if there was something I could use as a substitute and found I could use applesauce.  It worked great and I didn’t feel as guilty about eating cookie dough with raw egg.

Chewy M&M Cookies

Ingredients

  • 1 cup packed brown sugar
  • 1/2 cup white sugar
  • 1 cup butter, softened to room temperature
  • 2 eggs or 1/2 cup applesauce
  • 1 1/2 teaspoons vanilla
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups M&Ms

Instructions

  1. Preheat oven to 350.
  2. In a large bowl mix sugars, butter, eggs, and vanilla thoroughly.
  3. Add flour, salt and baking soda to creamed mixture and mix well.
  4. Add 3/4 cup M&M candies.
  5. Drop dough by spoonful onto baking sheet. Press a few candies onto each dough ball
  6. Bake at 350 degrees for 9-11 minutes or until slightly golden.

    I didn’t know that applesauce could be used in place of eggs. Thank you for that little tidbit of info!!! The cookies look great and I love those pastel m&m’s too!!!
