The spring time M&Ms have arrived and Jackson thought we really needed to get some at the store and I recently came across this recipe on Pinterest. I love to buy M&M cookies at the store because they always seem to be just the right texture. These turned out to be just as good. I ran into a slight problem when I realized we were out of eggs. So I went to the Internet to see if there was something I could use as a substitute and found I could use applesauce. It worked great and I didn’t feel as guilty about eating cookie dough with raw egg.
Chewy M&M Cookies
Ingredients
- 1 cup packed brown sugar
- 1/2 cup white sugar
- 1 cup butter, softened to room temperature
- 2 eggs or 1/2 cup applesauce
- 1 1/2 teaspoons vanilla
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 cups M&Ms
Instructions
- Preheat oven to 350.
- In a large bowl mix sugars, butter, eggs, and vanilla thoroughly.
- Add flour, salt and baking soda to creamed mixture and mix well.
- Add 3/4 cup M&M candies.
- Drop dough by spoonful onto baking sheet. Press a few candies onto each dough ball
- Bake at 350 degrees for 9-11 minutes or until slightly golden.
