SRC: Sun-Dried Tomato Salsa

Previous recipes I’ve made for SRC include: Chocolate Brownie Oatmeal Cookies, (Mini) Chicken Taco Salads, Bacon & Feta Pasta, Bacon Jalapeno Corn Chowder, Cheesy Penne with Spinach and Artichokes, Cookies in a Jar, Creme Brulee Cheesecake Bars, Southwestern Chicken Pizza

My assignment for this month was Gluten Free A to Z Blog.  Judee has a passion for tasty food and cooking.  Her blog is full of easy and nutritious recipe that are sure to delight your family (whether you eat gluten free or not!).  I’d also love to try Quick & Easy Vegetarian Rice and Black Beans and Marvelous Mini Quiches.

We love a good salsa around these parts – Garden Fresh Salsa, Oven Roasted Salsa, Black Bean and Corn Salsa, Simply Delicious Salsa (with avocado) or Mango and Black Bean Salsa – I totally jumped at the chance to add another salsa recipe to our repertoire…sun-dried tomato.  Salsa is such an easy and friendly little snack, this one came together quickly and the sun-dried tomatoes and raisins bring an interesting array of flavors to this delicious salsa.

Sun-Dried Tomato Salsa

Ingredients
  • 8 SUN-DRIED TOMATOES
  • 1/4 cup RAISINS
  • 2 medium YELLOW TOMATOES
  • 1/2 cup CILANTRO
  • RED PEPPER FLAKES
  • JUICE OF 1 SMALL LIME
Instructions
Soak sun-dried tomatoes and raisins in 2 separate bowls of water for about 2 hours. Drain.
Chop yellow tomatoes, salt and place in colander to drain for about 20 min. (Don’t skip this step or your salsa will be too watery!)
Place sun-dried tomatoes and raisins in a mini food processor. Pulse to chop well. Add yellow tomatoes, cilantro, red pepper flakes and lime juice. Pulse until you reach desired consistency.
Season to taste with salt and serve with chips.

    That salsa sounds great. I’ve never cook with sun dried tomatoes that weren’t packed in oil before. Now I know what to do with them.

    My husband makes salsa all the time, and I think adding sun-dried tomatoes sounds like a great idea. I’ll definitely suggest it to him next time.     i’m with you – salsa is a great snack. i can only imagine how sun dried toms would amp up the flavor. I like putting them in my mac and cheese for a tomatoey kick to the face.

    I am a big fan of sun dried tomatoes, I add them to breads and pastas but making a sauce seems like a more delicious idea
