French Toast Sandwich Sticks

I love breakfast any time of day (french toast is one of my all time faves).  I love quick and easy meals.  I love it when everyone cleans their plate.
I loved this recipe because it was all of the above.  
This one’s going to keep coming back for breakfast, lunch or dinner.  It’s an easy way to switch up a classic. My husband usually doesn’t think breakfast qualifies as dinner.  The night I made these he was working late, he got home and I served these to him (although I cut his into triangles).  His response was ‘I was really craving breakfast, these are pretty good.’  I just smiled because I was right about breakfast for dinner.
So next time you need a quick, kid friendly, husband pleasing, breakfast any time of day entree – pick these!

French Toast Sandwich Sticks

Ingredients
  • 3 EGGS
  • 3 Tablespoons MILK
  • 1/2 teaspoon VANILLA
  • A few shakes of CINNAMON
  • 8 slices BREAD
  • CREAM CHEESE
  • YOUR FAVORITE JELLY
  • MAPLE SYRUP, for serving
Instructions
In a shallow dish, beat together eggs, milk, vanilla and cinnamon.
Make 4 sandwiches by spread cream cheese and jelly between 2 pieces of bread. Dip each sandwich in egg mixture.
You can cook these in a pan or on a griddle, you can also put them all on a baking sheet and cook them in the oven until golden.
Cut into sticks (or triangles) and serve with maple syrup.
