Lemon is one of my favorite flavors and these little cookies looked like the perfect summer treat. They did not disappoint–please pardon the crumbs and a sample another one while I write this blog. Delish! They are easy to make and they are small so you can either have a bunch for a party or you can eat a lot more and not feel so guilty. The original recipe called for a lemon cake mix with pudding added which I couldn’t find when I went to the store so I just used a Lemon Supreme cake mix and they turned out awesome. Jackson (my three year old) loved the part where you get to roll the dough in the sugar. Of course it was messy and it took a lot longer but I love that he can help in the kitchen.
- 3/4 cup butter, softened
- 1 egg
- 1 package, 2-layer lemon cake mix
- 1 cup yellow cornmeal
- 2 Tablespoons lemon peel, finely shredded
- Granulated sugar
