I haven’t made homemade pizza in a really long time and when I saw this great recipe in my Trader Joe’s cookbook, I thought I’d try it out. We had some left over grilled chicken in the fridge from the night before so we added it to the recipe, but, that’s definitely optional. Let’s just say we’ll be making this again very soon!
Spinach & Artichoke Dip Pizza

Ingredients
- 1 (1-lb) bag refrigerated plain pizza dough
- 1/2 container (about 7 Tablespoons) Grilled Artichoke & Parmesan Dip (I used Trader Joe’s, you can usually find some in the deli section near the hummus)
- 1/2 (14 oz) can artichoke hearts, drained thoroughly and chopped
- 1 cup frozen spinach, thawed
- 1 cup shredded mozzarella cheese
Instructions
Preheat oven to 500 degrees or as high as your oven goes.
Stretch or roll dough into a 12-inch diameter circle on a lightly floured surface. Transfer to pizza pan.
Spread artichoke dip on pizza dough.
Squeeze water out of thawed spinach. Sprinkle pizza with artichoke hearts, spinach and cheese.
Bake for 8-10 minutes or until cheese is bubbly.
