So here’s the story….. I woke up one sunny morning and as I rolled over and my kids willed me to open my eyes I decided that today would be a homemade donut kind of morning! So as I got the iPad to search for a saved recipe I discovered that my husband had logged me out of Evernote! And being that we don’t have internet I couldn’t log back in! Remembering that I had recently done the unthinkable … the old fashioned task of writing something down on paper with a pen and in my own handwriting … is what saved me. I had written down the recipe for the Cookies n’ Creamdonuts! YEA!! Donuts were on their way! But wait… As I began to get the ingredients I needed I realized the Oreos had been finished during a midnight snack the previous night!! As I let out a big sigh at the disappoint of knowing I wouldn’t have the cookies n’ cream donuts today I made the decision to make that recipe without the cookies. Settling for a mere chocolate donut. As they were baking my spirits began to rise as I began to think about the frosting. I knew that because they were missing their star ingredient I wanted to make a more exciting frosting. As I began to pull things together I saw a jar of espresso powder in the baking cabinet. In an instant I forgot about the missing Oreos and made a frosting that has become my favorite! It is creamy and rich in mocha flavor. I have put it on donuts and brownies and been pleased both times and have no doubt that it would be outstanding on cupcakes as well. And since I’m telling the whole story I might as well tell you that having put the leftover frosting in the fridge, I have found myself eating it straight from the container. With no shame! It is just that good! If you are a mocha lover, this is a must try. I really don’t think you’ll be disappointed.
Mocha Cream Cheese Frosting

Ingredients
- 4 oz CREAM CHEESE, softened
- 6 1/2 cups POWDERED SUGAR
- 2 Tablespoons MILK
- 1 Tablespoon COCOA POWDER
- 2 1/2 Tablespoons ESPRESSO POWDER
- dash of SALT
Instructions
With an electric mixer, beat cream cheese, powdered sugar, and milk till smooth. Add cocoa, espresso, and salt. Frost what ever your heart desires or eat with a spoon!! : )
