As usual we celebrate this time of year by having I LOVE PUMPKIN week. When looking for new and drool worthy ways to use create a pumpkin treat I came across this Pumpkin Pie Chex Mix. When I used it as a response for “What are you making for pumpkin week?”, I got “WHAT? It doesn’t even have pumpkin in it! We want the orange stuff!!” So, before you even get to the ingredient list I will tell you it does not have the orange stuff! There is no pumpkin in this recipe. That being said, it is a wonderful (and quick) way to create the flavors and warmth of pumpkin pie without having to bake or use a fork to eat it.
The original recipe called for pecans. I thought it sounded like a great idea but I couldn’t see spending the money on them when my husband and kids wouldn’t appreciate them. So I added a ginger twist by substituting with Annie’s Gingersnap Bunny Crackers. You could use broken gingersnap cookies, broken graham crackers, or nothing at all. Since the chex is the real star of the show here!
Pumpkin Pie Chex Mix
Ingredients
- 1/4 cup BROWN SUGAR
- 1 Tablespoon PUMPKIN PIE SPICE
- 1/4 cup BUTTER
- 2 teaspoons VANILLA
- 2 cups CINNAMON CHEX CEREAL
- 2 cups WHEAT CHEX CEREAL
- 2 cups HONEY NUT CHEX CEREAL
- 1 cup Annie's GINGERSNAP BUNNIES, or cookies, graham crackers, or pecans
Instructions
- In small bowl, mix brown sugar and pumpkin pie spice; set aside. In small bowl, microwave butter until melted. Stir in vanilla. In large microwavable bowl, mix all cereals. Pour butter mixture over cereal mixture, stirring until evenly distributed. Add sugar and spice mixture and gently stir until coated. Microwave uncovered on High 5 minutes or until mixture begins to brown, stirring every minute. Stir in gingersnap bunnies. Spread on wax paper or a cookie sheet to cool. ENJOY!
