I am always on the lookout for a great lunch recipe. I often eat leftovers from dinner the night before for lunch but sometimes you just want to change it up. Plus, I like that you can make this ahead of time and it is ready to go for lunch or a quick snack. The mixture of apples and cranberries definitely make this a new fall favorite!
Apple Cranberry Chicken Salad
Ingredients
- 1 Large Can of Chicken
- 1 celery rib, thinly sliced
- 1/2 cup chopped red apple
- 1/4 cup dried cranberries
- 1/3 cup mayonnaise
- 1 bacon strip, cooked and crumbled
- 2 tablespoons crumbled feta
- 2 tablespoons chopped Almonds
- Lettuce or Bread for serving
Instructions
- In a small bowl, combine the chicken, celery, apple and cranberries.
- Stir in mayonnaise.
- Serve on lettuce or bread; sprinkle with bacon, feta and almonds.
- Serves 2.
