DAY 7 PEANUT BUTTER COOKIE BARK
Did you know that today is National Hot Cocoa Day?? Wel it is, and since I recently discovered the most amazing homemade hot chocolate, we decided that today was the day to share it! There is something about this particular recipe that is out of this world. The secret ingredient is white chocolate! It makes it rich, creamy, and OH SO DELICIOUS. I can honestly say that I will not be buying hot chocolate packets ever again. This is just that good. I did find that the original recipe was slightly bitter. And since I drink my hot chocolate as a treat, I like it to be sweet. So I increased the amount of sugar. It is wonderful. Topped with a pile of marshmallow and the steam warming my face, it is the yummiest way to warm up on a cold winter’s day.
I know this is not your typical holiday treat that can be put on a platter and taken to the next party. BUT… It does make a wonderful gift. You can give a whole batch in a fancy container as a family gift. Or give a couple of servings in a cellophane bag with a curly ribbon to a neighbor or teacher. To make the gift even more complete also give marshmallows, candy canes, or hot chocolate spoons. Or if you don’t want to give it away, gift it to yourself for being so good the whole year. You deserve it!
Ingredients
- 3 cups NONFAT DRY MILK POWDER
- 3 cups POWDERED SUGAR
- 1½ cups COCOA POWDER, dutch-process or natural
- 1½ cups WHITE CHOCOLATE CHIPS
- ¼ teaspoon SALT
Instructions
- Whisk together all ingredients. Place in food processor and pulse until chocolate is finely ground (I have a mini food processor, so this takes me a few rounds, but then I just combine it all again in one container in the end). Store in an airtight container for up to 3 months. Makes approx 20 servings.
- Whisk 1/3 cup of mix into 1 cup of HOT milk. Top with marshmallows or stir with a candy cane or hot chocolate spoon, if desired. ENJOY!!
