Mint Oreo Bark

DAY 1   PEPPERMINT CREAM BITES                  DAY 2   GINGERDOODLE COOKIES

 

Yum, Yum!  That was the response after trying this simple holiday treat.  If you have been reading the blog for awhile you know that I love to make recipes that are delicious and easy!  2 ingredients…how could it be any easier?!?!  I liked this best when it was chilled but you could store it either way. Also, if you don’t prefer mint you can just use regular oreos per the original recipe. Enjoy!

Mint Oreo Bark

Ingredients

  • 15 Cool mint oreos plus 3 for topping
  • 10 oz. package white chocolate Chips

Instructions

  1. Line an 8×8 pan with enough parchment or wax paper for a 1 inch overhang on each side.
  2. Place chocolate in a double boiler over low heat and stir continuously, until chocolate is completely melted. Transfer chocolate to a heat proof bowl and cool for 5 minutes. Add chopped Oreos and stir to combine. Pour mixture into pan. Use a spatula to smooth out top.
  3. Finely chop remaining Oreos and sprinkle on top. Chill for about 10 minutes until chocolate becomes solid.
  4. Lift whole bark out of pan by holding onto parchment or wax overhang. Split bark into pieces with a fork.

    I love easy recipes like this! Mint is one of my all-time favorite flavors, and this stuff looks soooo good. I have a feeling if I made it, I couldn’t stop eating it. LOVE!
