Last week for my birthday I received a few new cookbooks from Becca. One of them I had seen online as being a top cookbook for 2013. It’s called Weelicious and is based on the idea of feeding your kids healthy food from the start and not being a short order cook as they get older. One family, one meal. This concept is huge for me. We made all of our baby food and attempt to make healthy choices at home. I will admit that we love sweets and I am guilty of making Jonah PB&J when we are all eating something else. But as with everything it is a continual goal for our family.
When I got the cookbook I began flipping through it and immediately started making a list of what I wanted to make. I soon realized that I was listing almost every single thing! So as a forewarning… You may see a lot from this cookbook in the coming months!
As for this pancake recipe… wonderfully delicious! We loved the addition of the apple. We ate them with honey or syrup but honestly they were good just by themselves (which makes it a whole lot less messy). They were all around a wonderful pancake!
Ingredients
- 1 cup finely diced APPLE, we actually think we would prefer to grate it instead
- 1/2 teaspoon CINNAMON
- 1 Tablespoon BROWN SUGAR, packed
- 1 1/3 cups FLOUR
- 2 1/2 teaspoons BAKING POWDER
- 1/2 teaspoon SALT
- 2 Tablespoons VEGETABLE OIL
- 1 1/4 cups BUTTERMILK
- 2 EGGS
- 1/2 VANILLA BEAN or 1 teaspoon PURE VANILLA EXTRACT
Instructions
- In a small bowl, combine apple, cinnamon, and brown sugar. In a large bowl, combine flour, baking powder, and salt. In a medium bowl, whisk together oil, buttermilk, and eggs. Add vanilla (by scraping the inside of the pod) OR vanilla extract to the wet ingredients and whisk to combine. Slowly add flour mixture to wet mixture and stir until just combined. Lightly fold the apples into the batter. Heat pan or griddle to medium heat and grease. Pour 1/8 cup of batter per pancake onto the hot surface. Cook for 2 - 3 minutes per side, til golden brown. Serve with syrup or honey. Makes 6 servings. ENJOY!!
