Every year in December, my mother-in-law bakes up a storm and ends up with huge boxes of goodies to share.  She keeps these treats on her ice-cold Iowan porch until taking them to whatever family function she’s attending.  The boxes have iced sugar cookies, haystacks, caramel-y marshmallow treats, peanut butter blossoms, cracker toffee, date balls and a few other things I can’t remember right now.

I asked my husband a couple of weeks ago what his all-time favorite Christmas treat was – he said date balls.  Now having always seen them in her box of treats, I’d never actually tried them (they were always too many options!).  Since we won’t be seeing her this Christmas, I decided to call her and get the recipe.  He was happy to have a batch of these waiting for him when he got home from work one day.

These treats have a little of everything – sweet date goodness, crunchy pecans and rice krispies and a powdered sugar coating.  Not to mention the fact that they are perfectly bite sized…good luck eating just one!

Date “Snow” Balls

These Date "Snow" Balls are sweet, little treats that are perfect for your Christmas goodie tray!

Ingredients

  • 1/2 cup BUTTER
  • 3/4 cup SUGAR
  • 2 cups CHOPPED DATES
  • 1 EGG
  • 1 teaspoon VANILLA
  • 1 Tablespoon MILK
  • 1/2 cup CHOPPED PECANS
  • 2 cups RICE KRISPIES
  • POWDERED SUGAR or SHREDDED COCONUT for rolling

Instructions

  1. In a saucepan over medium low heat, stir together butter, sugar and dates. Heat until boiling.
  2. While that is heating, beat together egg, vanilla and milk in a small bowl. After date mixture has come to a boil, remove from the heat for a moment and slowly add the egg mixture. Stirring constantly until incorporated. Return to heat and cook for 2 minutes. Set aside to cool until warm.
  3. In a large bowl, place pecans and rice krispies. Add warm date mixture and stir well to combine. Using a tablespoon sized cookie scoop, scoop into balls. Roll with greased hands until smooth.
  4. Roll in powdered sugar or shredded coconut if desired.
  5. Store in an airtight container.
