Having dinner with friends is one of my favorite things to do and we never even need a real reason to do it, beside the fact that it’s fun to get together. I recently hosted a ‘small bites’ party on a Thursday evening – oh how I love summer evenings! One of the things I loved about it – how super easy it was to put together. 3 Easy Entertaining Recipes:
Easy Queso Bean Dip: Spread Pacific Refried Black Beans in the bottom of a small baking dish, add a layer of Pacific Salsa con Queso. Bake about 15 minutes until hot and bubbly. Remove from the oven and top with chopped green onion, cilantro and pickled jalapeños. Serve immediately with your favorite tortilla chips.
Greek Hummus Stacks: Top sliced cucumbers with a layer of Pacific Roasted Garlic Hummus, layer on thinly sliced tomato, chopped Kalamata olives and crumbled feta cheese. Chill until serving.
Tortilla Pinwheels: Spread flour tortillas with your choice of Pacific Hummus (original, roasted garlic or roasted red pepper), add thinly sliced deli turkey, thinly sliced cucumber and spinach or spring mix lettuce. Roll up and slice into 1″ thick slices. You may need to secure these with toothpicks to keep them together. Chill until serving.

The three that I prepared for that evening took about 30 minutes all together.
