Dinner, supper, time to chow down…whatever you call your last meal of the day, it’s one that has a few requirements. Be relatively simple, who wants to slave away after putting in a full day of work, mothering or whatever else. Be tasty and flavorful, because no one wants to eat boring food. And be different, eating the same things week after week gets a bit boring, don’t ya think?

Pairing simple main dishes with Alexia Smart Classics, sweet potato fries or onion rings make dinner as simple as can be. I like to use them to make a one dish meal, add an interesting twist to a classic or bake them as usual with an enticing dipping sauce. Today I’m sharing 5 easy weeknight meal ideas that make actually making dinner a little bit less of a chore and are delicious and tasty!

Chorizo Potato Tacos | Crumbs and Chaos

Chorizo Potato Tacos

Ingredients
  • 12 oz. pkg. CHORIZO SAUSAGE
  • ½ bag ALEXIA SMART CLASSICS TRI-CUT POTATOES
  • 8 TORTILLAS
  • 1 AVOCADO, diced
  • FETA CHEESE
  • CHOPPED CILANTRO
Instructions
  1. Cook chorizo in a skillet and drain grease.
  2. Meanwhile, bake tri-cut potatoes according to the package directions.
  3. Divide potatoes, chorizo and avocado between tortillas.
  4. Sprinkle with feta cheese and cilantro.
  5. Serve right away.

Alexia Sweet Potato Fries with Sea Salt – baked according to the package directions

Spicy Honey Mustard Dipping Sauce (mix 6 tablespoons mayo, 1 Tablespoon spicy brown mustard and 6 teaspoons honey)

BBQ Beef Onion Ring Casserole

Ingredients
  • 1 lb. GROUND BEEF
  • ½ cup CHOPPED FROZEN ONION
  • 6 Tablespoons BBQ SAUCE
  • ½ teaspoon CHILI POWDER
  • ½ teaspoon SEASON SALT
  • 1 cup FROZEN CORN
  • 1 cup SHREDDED CHEDDAR
  • 1 pkg. ALEXIA CRISPY ONION RINGS WITH PANKO BREADING AND SEA SALT
Instructions
  1. Preheat oven to 400º.
  2. Brown beef and onions. Drain grease and return meat to pan.
  3. Stir in bbq sauce, chili powder and season salt.
  4. Layer on frozen corn, shredded cheese and then onion rings.
  5. Bake for 20-25 minutes.
Notes
(You can bake this in an oven proof skillet or casserole dish or divide into individual gratin dishes and then bake.)

Ingredients
  • ½ lb. SEASONED TACO MEAT
  • 1 pkg. ALEXIA SWEET POTATO WAFFLE FRIES
  • 1 cup SHREDDED CHEDDAR OR COLBY JACK CHEESE
  • 1 AVOCADO, diced
  • HOT SAUCE or SALSA
  • SOUR CREAM
  • CHOPPED CILANTRO
Instructions
  1. Bake waffle fries according to the package directions.
  2. Layer on meat and cheese.
  3. Return to the oven until cheese is melted.
  4. Top with avocado, hot sauce, sour cream and cilantro.
  5. Serve immediately.
