A hearty and delicious breakfast is always a winner, Peanut Butter Banana Baked Oatmeal is made with JIF Peanut Powder!
January…the fresh start of a brand new year. I really kind of like January…snow days, hibernation, the warmth of the fire in the wood stove, time to lounge around reading and a renewed commitment to making sensible choices in regards to food and physical activities. The middle of last summer, I decided to seriously cut out ‘extracurricular’ sugars. I mostly had farm fresh eggs and fruit for breakfast and avoided soda in favor of sparkling water with a squeeze of lime. I made it a point to pick up the kettle bell and do some simple kettle bell exercises at least 4 times a week. I felt better, I slept better and I went down a pants size. #winning I kind of let things slide during the holidays and I didn’t feel as good as I did in August and September. So after I tossed the remaining Christmas treats last week, I decided that I want to be really intentional about for the next few months – to make the best food choices I can and to do some physical activity at least 3 times a week.
For me, I really feel like the key to making good food choices all day long is to start with a hearty, protein filled breakfast. I’m less likely to long for something sweet later in the day if I ate a proper breakfast. I really enjoy eggs from our very own chickens (!), but there’s not always time for that. Baked Oatmeal is an excellent alternative to having to actually stand in the kitchen and make breakfast. This recipe makes at least 6 servings, which you can eat all week long or even freeze already divided into squares and thaw in the fridge overnight.
Let me introduce you to JIF Peanut Powder. Sold in a 6.5 oz. package, you can find it in the peanut butter aisle along side JIF Chocolate Peanut Powder. Both versions are a delicious addition to smoothies and can easily be used in your favorite baking recipes. JIF Peanut Powder has 8 grams of protein per serving, 85% less fat than traditional peanut butter and is made from 1 ingredient – fresh roasted peanuts.
TO MAKE PEANUT BUTTER BANANA BAKED OATMEAL:
This simple recipe starts with preheating the oven. Then you will mix together oatmeal, brown sugar, baking powder, salt and JIF Peanut Powder. Add mashed banana, egg and milk. After everything is well combined, you will bake for about 45 minutes. I liked this best served warm with a drizzle of honey and splash of milk. What I love about this baked oatmeal is the balance of flavors, it’s not too much of any one thing which makes for an enjoyable breakfast 🙂

- 3 cups OATMEAL
- ½ cup BROWN SUGAR
- 1 teaspoon BAKING POWDER
- ½ teaspoon SALT
- 4 Tablespoons JIF PEANUT POWDER
- 1 EGG
- 1 cup MILK
- 1 cup MASHED BANANA (about 2 medium)*
- Preheat oven to 375 degrees. Lightly grease a 2 quart baking dish or a 9x9 square pan.
- In a large bowl, stir together oatmeal, brown sugar, baking powder, salt and JIF Peanut Powder.
- Add egg, milk and mashed banana. Stir well. Transfer this mixture to baking dish.
- Bake 40-45 minutes until set in the center.
- Serve warm with additional sliced banana, a drizzle of honey and milk, if desired.
You can find JIF Peanut Powder and JIF Chocolate Peanut Powder at Walmart stores near the other peanut butter products. At my local Walmart, it was on the top shelf. Be sure to grab the other ingredients you need to make Peanut Butter Banana Baked Oatmeal!
